This wine is bottled as Vin de France rather than under an appellation, which allows a method few others use: a blend of Syrah and Cabernet is run onto the marc left after dry-pressing old-vine Grenache and left there for a single night, taking on colour, fruit and a little structure from the skins. The name records that one-night stay. Ageing is in concrete tank, which preserves freshness and leaves no wood character on the wine.
