GC is the estate's small-volume old-vine cuvée, and the marc is made from the skins left after that wine is pressed. Rather than distil on site, the estate sends the pomace to Laurent Cazottes in the Tarn, a distiller known for slow, low-volume double distillation in small alembics and for bottling without added sugar or caramel.
