The vineyard occupies a gentle hill at the heart of the appellation, and each autumn the team harvests Semillon and Sauvignon Blanc in multiple passes, selecting only grapes concentrated by noble rot. The wine is fermented and matured in new oak barrels. 2008 was a cool, late season in Bordeaux, which gave Yquem a subtle combination of richness and rare vivacity, with bright acidity keeping the sweetness lively.\u003c\/p\u003e\n\u003cp\u003eChill it to around 11 degrees and let it open in the glass.
