Laballe grows its own Ugni Blanc and distils in a wood-fired copper still dating from 1923, then matures the spirit in 410-litre Chêne Noir Gascon barrels built from oak cut in the Landes forest that surrounds the estate. That thick-grained wood works slowly, giving tannin and spice across many years and shaping the distinctive Laballe style. Nothing is added for colour and nothing is reduced with water: bottling is brut de fût, unfiltered, at natural alcohol and usually from a single cask.
