Peybonhomme is one of the larger biodynamic estates in Bordeaux, and while the family has increasingly pushed into low-intervention cuvées, this is the classic estate blend, made up of 75 per cent Merlot, 15 per cent Cabernet Franc and 10 per cent Malbec. All the fruit comes from the property's limestone and clay parcels in the Premières Côtes de Blaye. Fermentation runs on wild yeast and the wine is aged mostly in concrete, with around a tenth fermented and raised in two to three-year-old oak. It is bottled without filtration.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and holding for six to eight years.
