Daniel and Florence Cathiard bought the property in 1990 and rebuilt it thoroughly, adding a cooperage on site and converting the vineyard to organic farming. Cabernet Sauvignon leads the red blend, with Merlot, Cabernet Franc and a little Petit Verdot alongside. Picking is by hand, fermentation takes place in wooden vats, and the wine is matured in barrels, a good share of them made at the château itself.\u003c\/p\u003e\n\n\u003cp\u003eDecant an hour ahead and serve at cool room temperature with roast lamb, beef or duck; the wine begins to drink well at about ten years and will hold in a good cellar for considerably longer.\u003c\/p\u003e\n\n\u003cp\u003e\u003cem\u003e*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
