Petit Chablis comes off the younger limestone on the plateau rather than the marl of the valley, and the wines from up there are lighter and more direct. Fruit is picked by hand, fermented in stainless steel and bottled without oak, under a Diam closure.\u003c\/p\u003e\n\n\u003cp\u003eDry and brisk, with the chalky bite the appellation is known for.
