The apples are picked late and left to mature before pressing, then the juice ferments slowly and cool on its own yeasts. Fermentation is held back so the fruit's tannin and character survive, and the sparkle comes from a secondary fermentation, not added gas. Brut is the dry end of the range, and alcohol is low.\u003c\/p\u003e\u003cp\u003eDry, lightly sparkling and tannic, with baked apple and a faint farmyard note.
