Thick-skinned and naturally high in acidity, it was long consigned to bulk wine and rosado before a generation of growers began treating the old vineyards seriously. Garnacha, the other half of the blend, is the great red of northern and central Spain and has been grown alongside Bobal in these parts for as long as anyone can remember.
