Thick-skinned and high in natural acidity, it spent most of the twentieth century disappearing into bulk wine and rosado, and only in recent decades have growers begun bottling the old bush-vine plots on their own account. The names across this range nod to Don Quixote, whose creator set his knight errant wandering across these same plains, and the wines are drawn from the sort of dry, high, unglamorous country that produces them.
