The cool, dry climate and long autumn let Chardonnay ripen slowly while keeping the natural acidity that defines Tasmanian wine. Clarence House takes its name from a historic sandstone homestead in the valley dating from the colonial era, with the vineyard planted on the slopes around it. Chardonnay here is hand picked, whole-bunch pressed and fermented largely in French oak barrels, with lees contact through its time in barrel to build texture around the fine acidity of the fruit.
