Michel Chevré planted it between 2009 and 2013 with the help of Thierry Germain, using a range of Chenin clones and sélections massales taken from Chidaine’s vineyards, at a density of 8,000 vines per hectare — considerably higher than the regional norm. The parcel is continuous, has only ever been ploughed, and has been farmed organically from day one; yields are held to four or five bunches per vine and picking is by hand, still rare in a region where machine harvesting is the rule. Fermentation begins in stainless steel and finishes in a mix of foudre and 500-litre demi-muid, after which the wine spends ten months on lees and is bottled unfiltered.\u003c\/p\u003e\n\u003cp\u003eDrinking now and will hold for around eight years.
