Stones of that kind store heat through the day and drain hard, and the wine they produce is the most structured and the slowest to open of the domaine's regular cuvées, built on old-vine Grenache with a little Mourvèdre and Syrah in support. Clos du Caillou has farmed organically for many years and avoids new barriques altogether, ageing instead in concrete and large old foudre.
