Clos du Caillou sits at Courthezon on this eastern edge of the appellation and farms its vineyards organically under certification. Les Safres is the most immediately approachable of the estate's Chateauneuf cuvees, built on Grenache from these sandy parcels with a little Syrah and Mourvedre for structure.
