The grapes shrivel on the vine, a process known as passerillage, concentrating sugar and acid without relying on botrytis, and it is this that makes the region's moelleux wines what they are. Clos Larrouyat is the small domaine of Julien Salharang, one of the newer names in the appellation. The Phoenix cuvée is 100 per cent Petit Manseng, a thick-skinned variety that holds its acidity through late harvest.
