Comète is 75 per cent Petit Manseng and 25 per cent Camaralet, a nearly vanished local variety that covers a tenth of Julien Salharang's vineyard; that two of the appellation's more progressive domaines are invested in it, Dagueneau being the other, speaks for its potential. The Camaralet brings a spicy, citrus cut to the juicier Manseng. Fermentations are wild and the wines are raised in old barrels bought from Smith Haut Lafitte, with lees stirring in cooler years to build depth and texture. Malolactic conversion always takes place, needed to balance the acidity.
