The base wine here is Ugni Blanc, picked early and low in alcohol, then double-distilled in Charentais copper pot stills before long, quiet maturation in old oak casks, where the wood contributes little fresh tannin and the spirit slowly loses strength and gains complexity. The components in this blend are 25 to 30 years old at bottling, and the result is a striking copper colour and a dense, viscous palate of roasted nuts, baked pear and orange peel.
