Ovation is the entry point to their lot-numbered range, blending eaux-de-vie from Grande Champagne, Petite Champagne and Fins Bois, the last of these adding early-maturing roundness to the firmer, slower-developing chalk-grown spirits. As is standard in the region, the base wine is made from Ugni Blanc, double-distilled in copper pot stills. The character of Ovation comes principally from long maturation in Limousin oak, a wide-grained wood that gives up its tannin and vanillin readily and lends the spirit fullness, spice and a sense of sweetness without any added sugar. The aroma runs to ripe pears, spiced apple, maple syrup and vanilla, and the palate is silky, with the spirit well integrated and a mouth-coating texture.\u003c\/p\u003e\n\u003cp\u003eServe it neat in a tulip glass at room temperature, or over a single large block of ice.
