Cognac is traditionally transferred from barrel to demijohn — 25-litre heavy glass flagons — after about 75 years, at which point maturation slows almost to a halt but does not stop entirely. The eight demijohns behind this bottling were not a single distillation but a blend of 88 Grande Champagne cognacs, presumably racked from barrel into glass in 1898. Because they pre-date both phylloxera and the formation of the appellation, the blend would have included Colombard and Folle Blanche alongside Ugni Blanc, together with other varieties widely planted at the time.
