Extreme is assembled from ten such demijohns in the Tesseron family's Paradis cellars, with the youngest component from 1905 and the oldest from 1865, and a portion pre-dating phylloxera. The older lots therefore include pre-AOC plantings of Colombard and Folle Blanche alongside the Ugni Blanc that dominates today. Some 70 to 80 years in oak followed by decades in glass produce a spirit that is velvety and supple, of great depth and rancio complexity, opening in waves and closing soft, long and surprisingly fresh. The 1.75-litre bottle is a scale replica of the demijohns it came from, and only 300 were made worldwide.\u003c\/p\u003e\n\u003cp\u003eServe neat at room temperature in a tulip glass, with nothing alongside it.
