Picking ran late, at the beginning of May, and the fruit was destemmed to tank for a week before being pressed off and matured for eighteen months. That long, slow finish is unusual for a rosé, and it is what gives the wine its shape and grip. Nebbiolo in the Adelaide Hills is still the work of a handful of growers, and Jasper Button's take on it leans savoury.\u003c\/p\u003e\n\u003cp\u003eCherry, cardamom and currant, with persistent ashy tannins and juicy acidity holding it all together. Serve at 10 to 11 degrees, in a wine glass.
