Hand harvested, sorted and destemmed with ten per cent whole bunches retained, the fruit macerated for three weeks before eighteen months in a large old foudre. Warmer conditions in 2024 brought better ripeness in skins and stems, so there is more depth and finer tannin than the previous release. Jasper Button credits gentle extraction for the light frame and the sand for the tannins.\u003c\/p\u003e\n\u003cp\u003eA plum and violet core sits at the centre, tannins fine and sandy, with a long line of natural acidity lifting the close. Serve at 15 to 16 degrees.
