It went to old barrels, took malolactic conversion naturally in late spring, and stayed on original lees for thirteen months before seven months in tank and bottling without fining or filtration in November 2018. The block is half a hectare of the northerly Clod Block on the Weavers' organically farmed Churton ridge — inland, high, with a wide diurnal range and gravel running through clay. Clones 777 and Clone 5.\u003c\/p\u003e\n\u003cp\u003eCompact and sappy on opening, it fills out with air into a creamier texture: red and dark cherry, plenty of five spice, a hint of chocolate, tannins very fine. Serve at 14 to 15 degrees.
