The soil is Southern Valley clay around 1.5 metres deep over gravelly silt, holding enough moisture through a dry summer that irrigation is never needed. Corofin's allocation runs to five rows — 1,200 vines. Mike Paterson credits the dry-grown, ungrafted, deep-rooted material with delivering ripeness, precision and harmony at the same time. Winemaking follows the Wrekin, except that the whole volume was fermented in two 500-litre seasoned French puncheons.\u003c\/p\u003e\n\u003cp\u003eJuicy citrus and white nectarine with white pepper, fresh ginger and a touch of ocean spray, mouth-filling and textured — a shade richer than the Wrekin bottling, and rounded off with a twist of mandarin bitterness.
