Prosecco is produced by the tank method, in which the second fermentation takes place in a sealed pressurised vessel rather than in bottle, a technique that suits Glera and keeps the wine light on its feet. The grape itself was renamed Glera in 2009, when Prosecco was reclassified as a protected place name rather than a variety, a change that fixed the name to the north east of Italy. Glera itself is a vigorous, late ripening grape long grown on the hills between Conegliano and Valdobbiadene.
