The blend is ninety per cent Sangiovese with ten per cent Canaiolo, all hand-harvested and co-fermented, with fifteen per cent whole bunches included. Fermentation is natural, and the wine is aged in a combination of 25- and 40-hectolitre botti, a traditional format that has become uncommon in a Tuscany still fond of barriques. Arianna Gelpke prefers large wood for the way it softens Sangiovese's tannins, and the transparent house style follows from that: fresh cherry and berry fruit, a silky palate, feathery tannins and a cooling, bergamot-like tang. The Canaiolo adds a note of spice to the liquorice and woodland character.\u003c\/p\u003e\n\u003cp\u003eReady on release and good for six or seven years, it goes with pasta al ragù, grilled sausages or a plate of pecorino.
