The fruit comes from three parcels planted by Wendel Gelpke in the 1970s, cropped at a level that yields about one bottle per vine. Since 2015 the wine has been declassified from Chianti Riserva to Toscana Rosso: Aljoschia Goldschmidt felt the Riserva DOCG no longer conveyed what this bottling represents, and preferred the IGT designation. With minimal pushdowns, the wine can spend up to a month on skins before being pressed to 25-hectolitre large-format oak and used tonneaux for just under two years. It is the only red at the estate to see any new barrels, from a Burgundy cooperage, and the oak sits within the fruit rather than on top of it. Ripe cherry, tobacco, dried herbs and an iron-filing savour give the palate its nuance, and the finish carries Sangiovese's sour-plum acidity.\u003c\/p\u003e\n\u003cp\u003eGive it several years and drink over the following decade or more, with bistecca, braised beef or aged pecorino.
