Fruit is taken from three parcels planted by Wendel Gelpke in the 1970s and cropped hard, at roughly one bottle per vine, with the fruit sorted twice, first among the rows and then on the bench, and the bottling made only in the strongest years. Since 2015 it has carried a Toscana Rosso label, Aljoschia Goldschmidt taking the view that the Riserva designation no longer conveyed what is in the bottle. Fermentation is spontaneous in truncated wooden vats and small open-top vessels, maceration runs up to forty days with daily punching down, and two years in tonneaux and 25-hectolitre barrels follow malolactic conversion in wood.\u003c\/p\u003e\n\u003cp\u003eIntense ruby in the glass, with red fruits and a spicy note of cinnamon, then a soft, fruity palate closing on a smoky aftertaste. Serve at 17 degrees, decanted.
