Corzano e Paterno farms the rocky slopes of San Casciano, in the Colli Fiorentini south of Florence, on gravelly soils rich in clay and limestone. The blend is deliberately eclectic, bringing together organically grown Sémillon, Petit Manseng, Chardonnay, Sauvignon Blanc, Trebbiano and Malvasia. The grapes are pressed as whole bunches and ferment with indigenous yeasts, each variety vinified and aged separately on its lees in stainless steel before blending, and Arianna Gelpke blocks malolactic conversion to keep as much tension in the wine as possible. No one variety dominates the result, which is pure and textural, with white-peach sweetness, citrus and white flowers and a nip of quinine-like grip on the close.\u003c\/p\u003e\n\u003cp\u003eDrink it over the next three years with grilled fish, a goat's cheese tart or roast vegetables.
