This is Aljoscha Goldschmidt's low-intervention everyday bottling: a blend of Sangiovese, including fruit from the estate's younger vines, with Merlot and Cabernet Sauvignon. The fruit is hand-harvested and given a pre-fermentation cold soak of nine days, which draws colour and aroma before the yeasts start work, then ferments naturally in stainless steel. Each variety is vinified separately and the blend is assembled afterwards. There is no new oak in the picture, and the wine is made for freshness rather than structure, in the tradition of the house red that a Tuscan estate keeps for its own table.\u003c\/p\u003e\n\u003cp\u003eDrink over the next three or four years with pasta al pomodoro, grilled sausages and pecorino.
