David Croix and Damien Courbet built this cuvée, first made in 2018, from 70% Chardonnay and 30% Savagnin across four vineyards in the Château-Chalon area: Sur Lya, on limestone scree over deeper Liassic grey marl, Le Calvaire and Trémoulette on similar marl, and En Parelle, a biodynamically farmed site facing northwest on deep gravelly white limestone. The intention is a panoramic view of the Jura rather than a portrait of one terroir. Fermentation and maturation take place in 228-litre barrels of five or six years of age, with En Parelle raised in tank, and barely more than 5% of the Chardonnay is aged sous voile under a film of yeast, which adds a hint of apple skin and nutty complexity.\u003c\/p\u003e\n\u003cp\u003eDrink it over the next five or six years with roast chicken, comté or a mushroom tart.
