This bottling draws on fruit from Arbois, Passenans and Château-Chalon. The Arbois parcel is En Chemenot, and both it and the Passenans fruit are organically farmed, with Croix and Courbet involved in the harvest decisions. The third parcel is En Beaumont, a highly regarded Château-Chalon lieu-dit farmed by Courbet and in organic conversion, where the vines date from 1962, 1985 and 1991 on clay and limestone scree over grey marl. Every bunch was picked by hand and given a three-hour press cycle with lightly crushed whole clusters. Ferments were spontaneous, and the wine was raised for five months in older barrels then fifteen months in stainless steel, with sulphur held to 20 to 30 parts per million.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and good for six to eight years.
