The Cullen family planted here in 1971 and the vineyard has been farmed biodynamically since 2003 under Vanya Cullen, with the estate's own compost and no synthetic inputs. Fruit is hand-picked and sorted berry by berry, fermented with wild yeast and matured in French oak barriques, with Merlot and the other Bordeaux varieties filling out the Cabernet frame.\u003c\/p\u003e\u003cp\u003eDecant and serve at around 17 degrees alongside lamb, venison or a dish built on wild mushrooms.
