Margaret River's gravelly loam and maritime climate ripen Malbec and Petit Verdot without the heaviness they take on in warmer places, and the Mangan vineyard, planted in the mid-1990s, was given over to varieties chosen for a warming climate. The fruit is hand-harvested, naturally fermented, basket pressed and matured around eight months in French oak, roughly a third of it new, with no fining.\u003c\/p\u003e\u003cp\u003eServe at 17 degrees with grilled lamb, beef or a spiced vegetable dish.
