The Metricup fruit is farmed to the same biodynamic standard as the rest of the estate. It is whole-bunch pressed, fermented with wild yeast in French oak and matured on lees, with new wood used sparingly.\u003c\/p\u003e\u003cp\u003eServe at 12 degrees with roast chicken, fish or a soft cheese.
