The estate is certified biodynamic and carbon neutral; the wine is sorted berry by berry, wild-fermented and matured in French oak barriques, a portion new.\u003c\/p\u003e\u003cp\u003eDecant well ahead and serve at 17 degrees with aged beef, lamb or venison.
