It is darker and more restrained than the other single sites when young, with dark cherry, violet, blackberry, cola and roasted spices, plus a hint of vanilla from oak. With air it softens and turns more savoury, and the palate is plush and velvety with fine tannins and natural acidity.\u003c\/p\u003e\n\u003cp\u003eOpen it an hour ahead and serve at around 16 to 17 degrees with roast lamb, beef bourguignon or duck confit.
