It suits Cabernet Sauvignon, which ripens fully here while keeping its structure. Elena Brooks, winemaker and co-founder of Dandelion Vineyards, sources fruit from the zone for this wine. The 2023 is dark purple with violets, blackberry, cassis and licorice, plus tobacco, leafy notes and some oak spice. The palate is taut and dense, with fine, youthful tannins that will soften and add texture over the coming years.\u003c\/p\u003e\n\u003cp\u003eDecanting helps the young tannins settle. Serve at around 16 to 18 degrees with a rib-eye, roast lamb with rosemary or a mature cheddar.
