Chardonnay builds flavour slowly there while holding the acidity that gives it line and length. The fruit is from the Derwent Valley in the island's south, known for fine, tightly structured Chardonnay and Pinot Noir. Production is small and the approach restrained: careful fruit selection, barrel fermentation and maturation in French oak, then time to settle before release.\u003c\/p\u003e\n\u003cp\u003eMineral and tightly wound, with fine oak in support and extra texture from some bottle age.
