Barrel work in French oak is about structure, not flavour. The wine, from the partnership of ex-Hardys winemakers Peter Dawson and Tim James, is then kept back until it has some age on it.\u003c\/p\u003e\n\u003cp\u003eMineral and fine, with citrus and stone fruit over subtle oak and a little developed complexity.
