Their fruit is drawn from Meadowbank, in the Derwent Valley north-west of Hobart, where the long, cool ripening period suits the grape. French oak comes next, and then patience: the wine stays in the cellar until it has built some complexity in bottle.\u003c\/p\u003e\n\u003cp\u003eSavoury and fine, with red and dark cherry, a touch of spice and tannins softened by time.
