That warmth counts for Cabernet in a region better known for Pinot Noir and Chardonnay. Picking landed at the end of March, and the fruit went into a wild ferment with no cultured yeast, then straight to old puncheons, seasoned wood with nothing new among it, where it sat quietly until bottling the following February. The whole approach is aimed at freshness and drinkability now, not a long sit in the cellar.\u003c\/p\u003e\n\u003cp\u003eBlackcurrant and bay leaf, a graphite streak, and tannins that are present but pliable. Give it 30 minutes in the glass and serve at 16 to 18 degrees.
