That density pushes the vines to root deep and compete, and it produces the most concentrated and powerful Pinot Noir on the property. Picking fell on 29 February, a touch later than the year before, and ten per cent whole bunches went into the ferment. Two weeks on skins with gentle pump overs did the extraction, then the wine went to French oak, a third of it new, for eleven months. Granite under the sandy soil is never far from the picture.\u003c\/p\u003e\n\u003cp\u003eDark cherry and blood orange, with a spiced, savoury undertow and tannins that are fine but plentiful. Serve at 14 to 16 degrees, and open it an hour ahead.
