Picking came at the beginning of April. Some of the fruit in each one-tonne fermenter got a foot-stomping, and the vessels were sealed afterwards, so most of the crop went through carbonic maceration for eleven days before being destemmed to stainless steel to finish, with gentle pumpovers twice a day for a fortnight. Maturation was split between seasoned puncheons and tank until December, which keeps the wine juicy and unvarnished.\u003c\/p\u003e\n\u003cp\u003eCarbonic handling puts the accent on crunchy dark berries, violets and pepper, with tannins that stay soft and a moreish finish. Serve it at 15 to 16 degrees, or lightly chilled on a warm night.
