MV6 dominates the plantings, with a scatter of 115 and Pommard from the south-western side. Fermentation started spontaneously with ten per cent whole bunches, and the cap was worked twice daily by plunging or pumpover for two weeks. Pressing sent ninety per cent to old French puncheons and ten per cent to tank for nine months, and the wine went to bottle without fining or filtration.\u003c\/p\u003e\n\u003cp\u003eRed cherry, raspberry leaf and a little forest floor, with silky tannin and a light, savoury finish. Serve at 14 degrees after twenty minutes in the fridge.
