Kirilly Gordon used Mendoza and Gingin clones for this vintage, both of them flavour-forward, which counts when the wine is going to carry phenolic grip. Picking waited until flavour and phenolic ripeness peaked late in the season. The bunches were destemmed and fermented on skins for two months, then pressed to seasoned barriques for maturation. The result sits closer to an orange wine than to conventional Chardonnay.\u003c\/p\u003e\n\u003cp\u003eTwo months on skins bring dried peach, ginger and a bitter-orange finish, with tannin you can feel on the gums. Serve at 12 to 14 degrees in a big glass.
