Aszú is produced by adding hand-picked, individually selected botrytis-affected berries to a base wine and macerating them; the puttonyos figure indicates how much aszú fruit went in, and therefore how sweet and concentrated the result is. Eszencia is the free-run juice that seeps from those berries under their own weight, so dense that it takes years to ferment and finishes at very low alcohol. Disznókő is a first-growth site on the southern edge of the region, on volcanic soils over clay and loess.
