Disznókő is a classified site on the southern edge of the region, replanted and rebuilt from 1992. The botrytised berries are picked individually and added in measured proportions to a non-botrytised base wine or must, which lets the shrivelled fruit swell and release its sugar before pressing. Fermentation is extremely slow, and the wine then matures for at least two years in Sauternes barrels from Château Suduiraut. The puttonyos number once counted the hods of aszú paste added to the base; today the classification is by residual sugar, with a minimum of 120 grams per litre for a five puttonyos wine. The aszú berries here were 66% Furmint, 25% Hárslevelű and 9% Zéta, with a base must of equal parts Furmint and Hárslevelű.\u003c\/p\u003e\n\u003cp\u003eSweet Tokaji of this class drinks well on release and keeps for decades.
