The Barthelmé brothers farm organically and biodynamically, and here the grapes are hand-picked, pressed as whole bunches and fermented slowly on wild yeasts in old casks and foudres. The wine then rests on its lees and usually finishes off-dry, with the stony subsoil keeping it upright.\u003c\/p\u003e\n\u003cp\u003eLychee, rose petal and ginger, full in body but not cloying.
