Maurice and Jacky Barthelmé moved the domaine to organic and then biodynamic farming. Picking waits for full ripeness, pressing is slow, and wild yeasts do the fermenting. Long lees ageing in big old foudres and casks adds breadth without any new-oak flavour.\u003c\/p\u003e\n\u003cp\u003eQuince and spice on a broad palate, a firm mineral line and just a trace of sweetness.
